Crafted with dedication, it spent three years on lees in stainless steel, stirred weekly, before the addition of Liqueur de Tirage. Its second fermentation in the bottle, followed by nine months on lees, culminates in a dégorgement that reveals its character. On the palate, it offers fine bubbles and a bright acidity, unfolding into a symphony of bramble fruit and berries, with a whisper of meringue evoking summery desserts. The finish is a complex ballet of floral and hay notes, leaving a dry, lingering, and utterly moreish impression.
