Concept: Planting a great European grape variety at Quinta dos Termos is an assumed Sin, as the temptation was not resisted. Today, the variety that gave the “Blood of Jupiter” in the past has proved itself in Cova da Beira, being this varietal production reserved for absolutely special years for Sangiovese.
Grape Varieties: Sangiovese.
Vinification: Hand-picked harvest for 15kg boxes. Reception with total destemming and smooth crushing, followed by a long maceration. Ageing in new and used French oak barrels for 12 months.
Tasting Notes: It has an open ruby colour and a fresh aroma, where red fruits, plums, figs and some spices stand out. The tasting reveals an excellent acidity, emphasizing the liveliness of the fruit combined with firm and smooth tannins that ensure a great longevity.
Serving Temperature: 16-18ºC
Pairing Suggestions: Roasted meats, grilled meats, oven-roasted sausages, pasta with tomato sauce.
