Soils: Non-humic lytolic, with slight granite texture
Concept: Fruit of a partnership with a PORVID and technical support from the Ministry of Agriculture and I.S.A., it was installed at Quinta dos Termos the only field dedicated to the recovery and valorisation of the variety Fonte Cal. It is an exclusive grape variety from Beira Interior, expressing well the terroir where it is originated, of high complexity, balanced acidity and a passionate freshness.
Grape Varieties: Fonte Cal.
Vinification: Hand-picked harvest for 15kg boxes. Reception with total destemming and crushing with protection against early oxidation. Clarification by gravity in 18 hours. Controlled fermentation at 20°C – 22°C. Ageing in stainless steel.
Tasting Notes: Citrine colour and shiny appearance. On the nose, it reveals fruity aromas, with discreet floral notes. Very tasty in the mouth with an elegant acidity and a passionate freshness.
Serving Temperature 8-10ºC
Pairing Suggestions: Strong dishes of roasted fish or cod and grilled octopus.
