A wine that will never be made again.

In September 2025, Leyla Kazim — broadcaster, BBC Radio 4’s The Food Programme presenter, MasterChef critic — was asked by her neighbour and friend Rui Costa, who runs the small organic vineyard Cas’Amaro, to make a wine with him. This is what came of saying yes. 

A naturally sparkling white pét-nat, made from Sercial, an indigenous Portuguese grape. Hand-harvested, wild-fermented, bottled before fermentation finishes so the bubbles form naturally in the bottle. Grapefruit, pineapple and orange blossom on the nose; smooth, lively and fresh on the palate.

Certified organic and vegan. Every bottle was filled and capped by hand via a machine with only three spouts, and labelled by hand by a small team over two full days.

Each bottle carries a signed gold seal on the label: Made in Alenquer, Portugal — with Leyla Kazim.

Winemaking
The grapes are harvested by hand, destemmed and crushed immediately upon arrival at the winery, and then pressed.
The must is chilled to 8°C and undergoes static settling for 2 days. After separation from the lees, spontaneous fermentation begins and continues for approximately 2 weeks at 14–16°C.


Before fermentation is fully complete, the wine is bottled and finishes fermenting in the bottle, creating natural carbonation.

Well-integrated acidity, with an elegant and fresh finish.
